pruning grapes

I planted three grape vines,("Niagara, Fredonia, and M Foch) last summer and plan to grow them on an arbor.I plan to cane prune prune them along one side of the arbor and then let the main trunks go across the top as three cordons running parallel to each other about five feet apart and for a lenght of ten feet. How should I prun the cordons. I think the easiest way is to spur prune them but I'm willing to cane prune if that will yield more gapes. Any advice?. This is my second year for grapes so I don' know much about them but 'm reading as much as I can. Is there anyone in Ottawa willing to give me a hand ? Thanks so much for any help you can give.

I'm from Southern Ontario and grow M. Foch. This is a hardy variety with small clusters. It produces an excellent wine when not left on the skins more than a day. You can prune using both methods but the best way is cane pruning. Make sure you leave maximum 12 to 15 buds ea. cane. I have many vines and only leave 4 canes per vine in order to get maximum fruit for wine making. I will sacrifice quantity of fruit for quality clusters. In your case I would probably allow more plant growth in order to produce more fruit. Hope helps.
